Spinach and cheese is one of my favorite combinations - spinach and cheese dip, spinach and cheese stromboli, spinach and cheese ravioli, and the list goes on! During Ramadan many of us eat puff pastry stuffed with beef or chicken. It wouldn't be Ramadan without pastries or patties as some call them. I wanted to change it up and make a spinach and cheese version! These beautiful little puffs are filled with spinach, cream cheese, feta, and garlic and herb goat cheese. They're crunchy, flaky, creamy, and cheesy!
Note:
You can omit any cheese you don't like and add another or stick to just cream cheese.
I think these would be great with shredded chicken mixed in to balance the softer textures!
INGREDIENTS
(Makes 9 puffs - simply double the ingredients to make 18 )
1 bag of spinach (I use baby spinach)
1 pack of cream cheese - room temperature
2 eggs (one for egg wash)
1 pack of puff pastry (thawed)
1/4 cup of feta cheese crumbles
4 oz pack of garlic & herbs goat cheese
1 tsp garlic powder
1/2 tsp black pepper
A dash of salt (the cheese has enough salt in it)
1 tsp red pepper flakes or more to taste
Directions
Finely chop the spinach until you have 2.5 cups.
In a bowl combine your cream cheese, egg, garlic powder, salt and pepper, red pepper flakes, goat cheese, and spinach.
Add in 1/4 cup of feta cheese crumbles and mix.
Preheat the oven to 400 degrees F and prep the cupcake pan by oiling it. I use an avocado oil spray.
Take out one sheet of puff pastry and roll it out to smooth out any lines.
Cut the pastry sheet into 9 even squares.
Insert the squares into the cupcake pan so that the center is pressed on the bottom of the muffin cups and the corners over hang the sides.
Fill each square with a spoon of the spinach filling.
Bring the four points of each square together towards the center so that they cover the filling, then lightly press them together in the middle.
In a bowl beat an egg and brush the tops of each puff with it.
Bake the puffs for 20-24 minutes until golden brown.
Once slightly cooled remove from the pan and serve fresh!
